Apple Blueberry Galette

Serves 6-8
Prep time 30 minutes

  • 1 stick unsalted Butter
  • 6 Apples ((I use 2 Rome, 2 Granny Smith, 2 Braeburn), peeled, cored, cubed)
  • 1/4 cup Honey
  • 1 tablespoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/8 teaspoon Salt
  • 1 sheet Puff Pastry Dough (rolled out a bit)
  • 1/4 cup whole fruit Preserves ((I use peach, but use your favorite))
  • 1/2 cup Blueberries (washed, dried, stems removed (strawberries, peaches or pitted cherries are nice too))
  • 1 tablespoon Flour
  • Egg Wash: 1 beaten Egg + 1 Tbs. Milk


Step 1
Preheat oven to 400*F
Peel, core and chop the apples into cubes
Step 2
Place Puff Pastry onto parchment paper and dust with flour.
Roll dough to elongate and remove seams
Step 3
Melt Butter in a medium size pot over medium heat
Add the cubed Apples and turn to coat with the butter.
Cook for 4 minutes or until the apples begin to soften
Step 4
Add the Honey, Cinnamon, Salt and Nutmeg
Turn to coat the apples with the honey and spices
Step 5
Put on the pot lid and cook down for 5 minutes
Step 6
Place Pastry and Parchment Paper onto a cookie sheet.
Spoon the Preserves over the Puff Pastry to cover the center of the dough
Step 7
In a large bowl, combine the Spiced Apples and any juices from the pot, the Blueberries, and Flour
This will thicken any juices in the bowl
Step 8
Spoon the fruit mixture over the preserves on the pastry dough
Step 9
Pull and turn the edges of the dough towards the center and over itself.
The center should be uncovered.
Step 10
Brush the edges with Egg Wash.
Sugar can be sprinkled over the wash if you want a sweeter, crunchier edge
Step 11
Add 1 Tbs. Butter to the center of the Galette
Step 12
Cook in a preheated oven for 20 minutes or until the edges are puffed and golden brown.
Step 13
Remove from oven and cool on parchment over a rack for 10 minutes.
Step 14
Serve warm with ice cream, whipped cream or just by itself!
