Tomato, Goat Brie & Basil Pizza

  • 1/3 cup olive oil
  • 3 cloves garlic (freshly grated)
  • 1 Prepared pizza dough (cut into 3x3 squares)
  • 1 handful Fresh basil (thinly sliced)
  • 10oz Goat Brie (sliced)

Oven Roasted Tomatoes

  • 18 Roma tomatoes (sliced in half, lengthwise (seeded if you prefer)
  • 2 tablespoons sugar


These tiny pizzas came out not only delicious, but looked great too.

The Goat cheese I used came from Coach Farm. I picked it up at the Kings Park Farmers Market. The Brie was mild, creamy and incredibly tasty.

I made some additional roasted tomatoes and incorporated them into marinara sauce I made the next day - a lovely addition.



Oven Roasted Tomatoes
Step 1
Arrange tomatoes, cut side up, on a parchment-lined cookie sheet, drizzle with olive oil, sprinkle with sugar
Step 2
Cook in oven at 250 degrees for about 2 hours, until fragrant and soft. remove from oven.
Step 3
Cook pizza squares on a parchment-lined cookie sheet until light golden (400 degrees)
Step 4
Heat oil and minced garlic until fragrant
Step 5
Brush basil lightly with garlic infused oil
Step 6
Brush pizza squares lightly with garlic infused oil, top with cheese slices, tomato and basil
Step 7
Heat in oven until cheese slightly melts - serve warm
