The Very Versatile Pizza Dough

Ingredients

  • 2 1/4 teaspoons active dry yeast (one 1/4-ounce envelope)
  • 2 cups warm water (105 degrees F to 115 degrees F)
  • 1 tablespoon Honey
  • 5 to 5 1/2 cups unbleached all-purpose flour, plus more for dusting
  • 2 teaspoons fine sea salt
  • Extra-virgin olive oil, for drizzling
  • Kosher salt and freshly ground black pepper

Note

This dough recipe makes 1 large dough, 2 medium dough or 4 individual doughs. It can also be used to make 2 focaccia

Directions

Step 1
Dissolve the yeast in the warm water in a large bowl and let stand for 5 minutes.

Add Honey and stir to combine. Let stand 3 minutes
Step 3
Stir in 3 cups flour and the salt, stirring until smooth.
Step 4
Stir in an additional 2 cups flour; continue adding flour (up to 1/2 cup), 1 tablespoon at a time, stirring until the dough comes away from the bowl but is still sticky.
Step 5
Turn the dough out onto a lightly floured work surface, and knead with lightly floured hands.
Step 6
Pull dough toward you with one hand and pushing it away from you with the other. Fold the dough back over itself and push forward. Repeat until it's easier to handle, about 10 times. Finish kneading normally until the dough is smooth, elastic and soft, but a little tacky, about 10 minutes.

Step 7
Put 1 Tbs olive oil in a large bowl.
Step 8
Shape the dough into a ball and transfer to a lightly oiled bowl and turn dough to coat.
Step 9
Cover with plastic and let rise in a warm place until it doubles in volume, 1 ½ hours in a proofing oven or up to 3 hours on the counter.

When doubled in size it should look like this...
(without the dent in the top... I put my finger in it!)

Step 11
Press it with your finger to see if it's done; an indent should remain.
Step 12
Gently remove the dough from the bowl onto floured board.
Step 13
Divide in half (2 large pies) or in quarters (4 individual pies).

Step 14
Roll each piece into a ball and put on a lightly floured baking sheet. Brush lightly with olive oil, cover lightly with plastic wrap and let rest 15 minutes.

Step 15
Stretch and shape each ball of dough into a rough circle or rectangle. Brush one side with olive oil and sprinkle with salt and pepper.
Step 16
Par cook for 10 minutes at 475*F
Step 17
Top with your favorites and bake at 475*F for another 10 minutes or until the cheese is melted and browning.
