Perfect Popovers

  • 1 cup all purpose flour
  • 1 cup whole milk (generous cup)
  • 2 large eggs
  • 1 tablespoon butter (melted)
  • 3/4 teaspoons salt
  • 2 tablespoons butter (to coat popover tin)


A lot of things can go wrong when making popovers, kinda like friendships, but with a little attention, they come out absolutely great. And some things are worth your attention – like these popovers and good friends.

Step 1
Mix dry ingredients in one bowl.
Step 2
In another bowl add 2 eggs, whisk till blended. Add milk and melted butter. Stir.
Step 3
Add dry ingredients to wet mixture. Mix with a whisk until blended, a few lumps are fine. Take care not to over beat.

Cover the mixture with a paper towel and let rest on the kitchen counter for 40 minutes. Preheat oven to 430 degrees.
Step 5
Place the popover tin in the oven for 5 minutes. Once the tin has heated, place it on a cooking sheet. Grease tins with butter. Gently stir the mixture and fill each cup 1/2 to 2/3 full.

Place in the oven, close door and bake for 30 minutes. Do not open the door. After 30 minutes turn off oven, poke 2 holes in each popover with a bamboo skewer. Leave popovers in the oven for 2 more minutes. Serve Immediately with butter or jam.
