Ginger Peach Chutney

Ingredients

  • 1/2 cup Apple Cider Vinegar
  • 1/3 cup Brown Sugar (loosly packed)
  • 1/4 cup Granulated Sugar
  • 1/2 small Red Bell Pepper, (seeded, diced)
  • 1/2 small Onion (diced)
  • 1/4 teaspoon Cayenne Pepper
  • 1/3 cup Golden Raisins
  • 2 Garlic Cloves (finely chopped)
  • 1 tablespoon Ginger (grated)
  • 1 teaspoon Salt
  • 6 medium fresh Peaches (blanched or peeled to remove the skin, pit removed, sliced into cubes)

Directions

Step 1
In a non-reactive pot, over medium heat, place the Cider Vinegar and Brown Sugar, Granulated Sugar Bring to a boil
Step 2
Add the Red Pepper, Onion, Cayenne, Raisins, Garlic, Ginger, and Salt.
Stir to combine.
Reduce heat and Simmer for 10 minutes.
Step 3
Add the Peach cubes and stir to combine. Continue to simmer an additional 15-20 minutes or until the peaches are soft and most of the liquid has evaporated.
Step 4
Continue to simmer an additional 15-20 minutes or until the peaches are soft and most of the liquid has evaporated.
Step 5
Remove from the heat.
Cool for 15 minutes in the pot.
Step 6
Serve at room temperature.
Store covered, for up to one week, in the refrigerator.
