Farmers Market Frittata

  • 12 eggs
  • 1 tablespoon olive oil
  • 6oz Herb Goat cheese
  • 1 medium red onion
  • 8-10 large shrimp
  • 4-5 heirloom tomatoes
  • 5-6 leaves fresh basil
  • salt and pepper


Instead of adding pictures of the recipe steps, I thought I would add pictures of the beautiful ingredients I picked up at the Kings Park Farmers Market this week to make this Frittata.

Step 1
Preheat oven to 350 degrees. Heat oil in 12 inch skillet on medium heat, add red onion, saute until soft, about 5 minutes. Then add cooked shrimp and heat though.

Whisk 12 eggs until light and fluffy, add salt and pepper.

Mix goat cheese into the egg mixture.

Turn into skillet. Place slices of tomatoes on top of the egg mixture.

Put skillet into the oven. Cook for about 30 minutes, or until eggs are set. (check by jiggling the skillet)

Garnish with basil when done.
