Everyday Meatballs

  • 2 cups torn leftover Italian Bread
  • Milk
  • 1/2lb each ground Beef, Pork, Veal
  • 2 Sweet Sausage Links, out of casing (no fennel)
  • 1/2 small Onion, minced
  • 2 Garlic Cloves, minced
  • 2 Basil Leaves, chopped
  • 2 Eggs
  • 1/2 cup Parmesan Cheese, grated
  • Olive Oil


These meatballs are not 'Sunday Sauce' meatballs. The recipe is the same but the cooking method is different. This recipe method is for what we call 'everyday meatballs'.... they are roasted in the oven. 'Sunday Sauce Meatballs' are cooked in the Sugo or Sauce.


Step 1
Set oven to 375*F
In a medium bowl, tear leftover/stale Italian bread.
Step 2
Put enough milk or water over bread to almost cover. Push bread into milk. Let sit for 5 minutes.
Step 3
In a large bowl, put all meat and sausage removed from casing.
Step 4
Press meat into bowl and add Onion, Garlic and Basil
Step 5
Go back to Bread, which by now has soaked up the milk, and squeeze the milk out.
Step 6
Put bread, eggs and cheese into bowl with meat
Step 7
Mix until all ingredients are incorporated
Step 8
Roll meat into balls about the size of a Clementine.
Step 9
Put meatballs on a lightly greased tray
Step 10
Place in 375*F oven for 35-40 minutes
Step 11
Serve with pasta or potatoes or on a hero/sub roll with sauce.
