Chocolate Covered Strawberry Scones

  • 2 cups Flour
  • 1/4 cup Sugar
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/2 cup unsalted Butter, cold and diced
  • 2/3 cups Buttermilk
  • 1 large Egg, beaten
  • 1 tablespoon Milk
  • 1/2 cup Strawberries,
  • 1/4 cup mini Chocolate Chips


Step 1
Preheat oven to 400*F. Line a cookie sheet with parchment paper
Step 2
In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt.
Step 3
Cut the butter into small pieces
Step 4
Blend butter pieces into the flour mixture using a pastry blender or two knives
Step 5
The mixture should look like coarse crumbs
Step 6
Add Buttermilk to the flour mixture and stir just until the dough comes together. Do not over mix the dough
Step 7
Dice 5 or 6 ripe strawberries to make 1/2 cup and combine with 1/4 cup mini chocolate chips
Step 8
Toss to distribute evenly throughout the dough
Transfer to a lightly floured surface and knead dough gently four or five times…. Unless your bowl is really big… then you can knead it in the bowl.
Step 9
Pat the dough into a circle and place on the parchment paper covered sheet pan.
Step 10
Make egg wash by mixing egg and milk
Step 11
Brush tops of the scones with egg wash
You can sprinkle with pearl sugar, cinnamon sugar or turbinado sugar, if desired
Step 12
Bake for about 25 minutes or until golden brown and a toothpick inserted in the middle comes out clean
Step 13
Remove from oven and cool on paper on wire rack
