Blackened Chicken with Creamy Avocado Sauce

Ingredients

Creamy Avocado Sauce

  • 1 avocado, seed removed
  • 6 tablespoons extra virgin olive oil
  • 3 tablespoons lemon juice
  • 2 tablespoons cold wate
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon crushed black pepper

Blackened Chicken

  • 2lb chicken (any parts)
  • 1 1/2 tablespoon garlic powder
  • 2 tablespoons paprika
  • 2 teaspoons black pepper
  • 2 teaspoons onion powder
  • 1 teaspoon cayenne pepper
  • 2 teaspoons oregano
  • 2 teaspoons thyme
  • 1 teaspoon crushed red pepper, optional
  • 1/2 teaspoon sea salt
  • olive oil, to coat chicken

Aly explains that blackened chicken has long been a favorite of hers and it was about time she put together a recipe for it. She adds that if you're not already obsessed with avocados, this is a great way to ease yourself into eating them as it has a very mild flavor.

Directions

Step 1
To make the avocado sauce, put avocado into a food processor or blender with olive oil, lemon juice, cold water, salt, and pepper, and blend until well combined. This can be made ahead of time and stores best in an airtight container in the fridge.
Step 2
To make the blackened chicken, mix all ingredients, except the chicken and olive oil, in a small bowl and set aside. Generously coat both sides of each piece of chicken with olive oil. Lightly cover each piece of chicken with the spice mixture and spread it into the oil with the back of a spoon. Grill chicken to your liking.
Step 3
Serve the chicken with a generous spoonful of avocado sauce on top and enjoy!
